Recipes for using Carrots - Card 6
Coleslaw(Serves 4)


½ white cabbage, finely shredded

2 carrots, peeled and grated

1 onion, finely chopped

6-7 dessertspoons low fat mayonnaise


  1. Place vegetables in bowl and mix thoroughly.

  2. Add enough mayonnaise to bind ingredients together and stir thoroughly.

  3. Keep in refrigerator until needed.

Serving Suggestions:

With crusty bread, garlic bread

With main meat or vegetarian dishes

With jacket potatoes

With toasted sandwiches

With ploughmans

With cold meat
