1 ripe tomato, chopped
1 lemon or lime
½ onion, finely chopped
1 small chilli, deseeded and finely chopped or 1 teaspoon chilli powder
A pinch ground cumin (optional)
A pinch dried or 2 dessertspoons fresh coriander
- Squeeze the juice from the lemon or lime into a small bowl.
- Cut the avocado in half around stone (pit) and remove stone. Carefully peel of the skin and dice the flesh, place in the lemon or lime juice and toss. Mash roughly with a fork.
- Add the onion, tomato, fresh chilli, cumin, chilli powder and coriander to avocado.
- Mix well and serve.
